Tex Mex pie

On request, after posting a post on Facebook showing the delicious Tex Mex pie I made this weekend, I’ll now share the recipe with you all.

It’s a Swedish recipe directly translated so you have to be careful when it comes to the measurements, a table spoon in Sweden and USA for example is 15 ml and in Australia it’s 20 ml. (I’ve  been frustrated about before – read HERE). I’m not sure you’ll be able to find créme fraiche and the taco seasoning mix for example either but maybe you know what to substitute it with. Sorry about the bad photo of the half eaten pie but I didn’t take a photo of it before we dug in so that’s all I got. 🙂

Serves 8

Ingredients

Pie crust

4 dl flour
2 tbsp baking powder
0.5 tbsp salt
50 g butter
1.5 dl milk

First layer

400-500 g minced meat
1 finely chopped onion
Butter/oil to fry in
1 clove of garlic
1 bag of taco seasoning (ca 40 g)
1 dl water

Second layer

4 chopped tomatoes
2-3 finely chopped chillies
2 dl créme fraiche
A dash of white pepper
1 clove of garlic
100 g feta cheese
2-3 tbsp taco sauce, hot
1 capsicum, cut in smaller pieces

1-2 dl cheese

Directions

Pie crust

Preheat oven to 225 ⁰C. Combine flour, baking powder and salt into a bowl, cut the butter into smaller pieces and add it to the flour mix. Add the milk and mix into a dough and press into a 20 cm diameter pie plate with tall sides.

Bake the pie crust in the middle of the oven for 10 minutes. This can be prepared the day before if you like. Just cover the crust with plastic wrap once it has cooled down and keep in the fridge.

1st layer

Fry the onion in a frying pan in butter/oil until it is soft. Add the mince and fry, while stirring, until you have chunky pieces. Press a clove of garlic into the mince, while stirring add the taco seasoning and water. Let simmer for a couple of minutes.

2nd layer

Mash the feta cheese and mix with the remaining ingredients.

Fill the pie crust first with the mince and then with the feta cheese mix.  Sprinkle cheese on top and bake in the middle of the oven for about 15 minutes.

Pajen sägs räcka till 8 personer men jag, Simon och Linda lyckades klämma nästan halva på 3 så jag vet inte det. 🙂

Ingredienser

Pajskal

4 dl mjöl
2 tsk bakpulver
0,5 tsk salt
50 g smör
1.5 dl mjölk

1:a lagret

400-500 g köttfärs
1 finhackad lök
Smör/olja att steka i
1 vitlöksklyfta
1 påse tacomix
1 dl vatten

2:a lagret

4 hackade tomater
2-3 finhackade peperoni
2 dl créme fraiche
1 krm vitpeppar
1 vitlöksklyfta
100 g fetaost
2-3 tsk tacosås, hot
1 paprika, delad i mindre bitar

Till gratinering

1-2 dl riven ost

Gör så här

Sätt på ugnen på 225 ⁰C. Blanda mjöl, bakpulver och salt i en bunke. Skär smöret i mindre bitar och blanda i mjölmixen. Addera mjölken och arbeta samman ingredienserna till en deg. Tryck ut degen i en rund pajform med höga kanter, cirka 20 centimeter i diameter. Grädda pajskalet i mitten av ugnen i 10 minuter. Börjar skalet bli bränt, så täck med lite folie. Gräddar du pajskalet dagen innan, så slå in det avskalnade pajskalet i plastfolie tills du ska använda det.

Fyllning 1:a lagret

Mjukstek den hackade löken i lite smör/olja i en stor stekpanna. Tillsätt köttfärsen och stek den under omrörning till en grynig röra. Pressa i en vitlöksklyfta, häll i tacomixen under omrörning och tillsätt vattnet. Låt småputtra en stund.

Fyllning 2:a lagret

Mosa fetaosten och blanda med övriga ingredienser

Fyll pajskalet med köttfärsröran och bred över fetaoströran. Strö över osten och grädda pajen i ugn, 225 grader i ca 15 minuter.
